Pimento Wood in the United States

Over a dozen years ago I first traveled to Jamaica with my wife. Upon coming to Jamaica throughout our journeys our cab driver explained to us that it is a must to try Scotchies. Without argument we went and since that first bite obsession took over.  I must of ate jerk chicken and pork every day the remainder of our trip, at one point I even called a taxi cab just to take me for my nightly fix! 

Over the years we have had more opportunities to explore the island and I kept trying more and more jerk from every jerk hut, shack or road side spot I could find!  After years and years of this obsession I tried to replicate that flavor I experienced on the island here back in the states but I never could get that same incredible jerk flavor here at home.  The chefs and jerk masters on the island kept telling me that you just won't get authentic jerk without using pimento wood. That is when my obsession went into overboard.  I had to find a way to bring this wood into the United States and at a reasonable cost for not only my jerk addiction but for jerk fanatics throughout the United States as well.  There was a small time competitor in the game but their prices were almost like committing bank account suicide and they never carried stock often and seemed unreliable.

For a couple of years we went back and forth with the United States and Jamaican governments, Customs and so many other governmental agencies it seemed endless.  Getting the wood into the United States seemed to have one loop hole after another after another after another!  After a couple years of endless calls, trips to the island,  and endless hours of blood, sweat and tears we finally gained full approval from both governments to legally bring the wood in the United States! I  wanted to give up on the quest at many times but deep down inside that passion for jerk kept me going to work through all the red tape and finally we were able to bring authentic pimento wood from Jamaica here to the states!

All of our products are treated before leaving Jamaica to protect from any pests, bugs or other agricultural pests that could pose threat to the United States.  We do not take any short cuts in what we do and are an authorized exporter of pimento wood.

Several years later and the mission is complete!  Not only were we able to get the wood priced at the lowest costs in the states but jerk fans are uniting across the U.S. using our products! PIMENTO CHIPS

Pimento Chips are used in your smoker, smoker box or even homemade tinfoil pouches.
Pimento chips  bring authentic Jamaican jerk to your very own backyard. By using this wood for smoking during BBQ it will infuse a true authentic jerk smoke into your meat. This is the wood that makes the jerk you taste on the island of Jamaica so amazing!  If you have not been able to figure out why you just can't get that same taste you tasted on the island look no further!! It is the pimento wood and sweet wood that infuses the meats at some of the most famous jerk stands in Jamaica. Pimento chips are to be used during the first 1 1/2 to 2 hours of your bbq session.  After 2 hours of smoke you can over smoke the meat. We only recommend smoking for 2 hours at the most, this is very important.



 PIMENTO WOOD STICKS

Pimento Wood Sticks are typically laid on top of a bed/layer of pimento leaves and then your meat that you are cooking is applied atop of the sticks. Some people will do all pimento wood sticks when making jerk however I have to strongly recommend the use of both pimento wood sticks and sweet wood sticks when making your jerk.  All of the famous jerk stands in Jamaica such as Scotchies etc.. are all using both pimento wood and sweet wood when making their jerk. Pimento wood sticks are around 12 inches in length as are the sweet wood sticks. Pimento Wood  (Pimenta Dioica) is used to infuse the meats when grilling authentic jerk. All sticks are reusable to a certain extent. To extend the life of your pimento wood sticks simply rinse and scrub well with warm water after each use. You can usually get about 3  BBQ sessions out of your sticks before it really starts to lose it's flavor and true aromas that are necessary to bring great flavor to your meats.





SWEET WOOD STICKS

Sweet Wood Sticks are used along with Pimento Wood Sticks to make authentic jerk.  Sweet Wood has a much sweeter smell than pimento wood, the aroma of the sweet wood is very pleasant to the nose,  you can only imagine what it is going to do for the meats! . Simply place both sweet wood and pimento wood on top of a bed/layer of pimento leaves on your grill to infuse the most amazing and authentic jerk flavor you have ever had. It is just like your back on the island! To extend the life of your sweet wood sticks simply rinse and scrub well with warm water after each use. You can usually get about three BBQ sessions out of each stick before it really starts to lose it's flavor and aromas.



PIMENTO LEAVES

Pimento Leaves are the leafs of the Pimento Tree. These leaves are used to infuse that pimento essence into the meats. We like to lay a decent size bed of these pimento leaves directly on the grill we are using along with a smoker box for the pimento chips and a small tin of water with pimento leaves placed into the water to keep your meat moist. The aromas of the leaves intensifies the cooking process spewing out an odor that will have your neighbors looking over your fence asking you what you are cooking. The pimento leaf is also used in teas to treat stomach aches and has other medicinal benefits as well.

How to make authentic Jamaican Jerk Chicken with Pimento Wood

The following recipe and process is the most accurate way to make authentic jerk chicken. This is exactly how some of the most famous jerk restraunts in Jamaica do their jerk! This is a marinade and process that will have your family and friends begging you for more!! 

STEP 1:  THE MARINADE
  • 2 Ounces Cane Vinegar (white or apple vinegar works as well)
  • 3 Ounces of Meyers Jamaican Rum or any dark rum (optional)
  • 2 Cups of  Soy Sauce
  • 1 Head of Garlic or minced garlic equal to 1 head
  • 1 bunch of green onions 
  • 1 yellow onion
  • 1 bunch of fresh Thyme
  • 6-8 scotch bonnet peppers OR habanero peppers  (be sure to de-seed)
  • 4 tablespoons of Jamaican Allspice seasoning
  • 1 tablespoon of ground black pepper
  • 1 tablespoon of white pepper
  • 1 tablespoon of Paprika 
  • 1 tablespoon of Nutmeg
  • 1.5 tablespoons of Cinnamon
  • 2.5 tablespoons of Brown Sugar 
  • 1 teaspoon grounded clove (optional)
Blend all ingredients in a blender or food processor until fine. This marinade will marinade two five pound chickens. Lightly salt and pepper your chicken before adding the marinade.
Be sure to marinade your chickens 24-48 hours minimum.




STEP 2: PREPPING PRIOR TO GRILLING

Soak your pimento wood sticks and pimento leaves in water for 30-45 minutes. Soaking the chips is not necessary but if you do soak the chips 10-15 minutes at the most.

STEP 3: PREPARING THE GRILL
When making Jerk Chicken it is important that you offset cook.  Meaning heat on one side of the grill and meat on the other side of the grill.  NEVER PUT HEAT DIRECTLY UNDER THE MEAT!!  Same thing applies if you are using charcoal or gas!
1.  Place a bed of pimento leaves on one side of grill (NON HEAT SIDE)
2.  Place your smoker box or foil pouch for the chips and a small pan of water with a few pimento leaves in it for moisture on the other side of grill (HEAT SIDE)

 3.  Lay your pimento sticks atop of the pimento leaves (4 pimento sticks will work)
Start your grill up turning the heat under the side of the grill that your smoker box and water pan are. Let the grill heat up for about 10 minutes.
 
4. Put two five pound birds atop the pimento sticks and leaves
 
5. Cook at 275-290 degrees for 3.5 - 4 Hours until internal temp is at 165 degrees and the juices run clear. Do not let your grill go over 300 degrees or your will dry out your birds. 
 
6. Let those chips smoke!  You only need about 4 ounces of  chips, we like to break it up into two different smoke sessions. One at the beginning and one following right after our first initial smoke runs out. Be sure not to oversmoke your birds!
 After about 3+ hours of grilling at 275-290 degrees and your birds get to about 150 degrees internal you can remove the pimento wood sticks and grill directly on the grill to finish the process to get the birds up to 160 - 165 degrees internal. We prefer doing this to crisp the skin of the chickens.
 
Once your birds get to about 160 degrees internal temperature you can take the birds off the grill and wrap in tin foil and let rest for 10-15 minutes before eating. This allows the juices to build up even more!
